2007! Do you even remember when these babies first hit the market? It was PANDEMONIUM! Arguably the first demonstrably GREAT vintage of the new century – 2007 was the benchmark that others were compared to for years…and this BIG BOY lives up to the hype! Wine & Spirits called it “the best vintage of Elivette we’ve tasted on release,” and I simply cannot and will not argue there. You know what – I’m just throwing in the whole review below…’cause there’s a ton of good information here that you need to know!
“The Spring Mountain Vineyard rises from 400 to 1,600 feet, covering 225 acres of vines in the western hills of Napa Valley. Elivette is a barrel selection from 135 blocks—mostly cabernet sauvignon (84 percent), with franc and petit verdot. The thin mountain soils give a wine that’s restrained and vinous rather than directly fruity, its supple, almost cushy tannins a relief for what might otherwise seem like cabernet severity (the way Left Bank Bordeaux can seem severe in its youth). Give this enough air and it plumps up to wild blueberry flavors and dark-roast coffee tannins, fresh and elegant, holding its structural refinement and length. This is the best vintage of Elivette we’ve tasted on release.”
Nearly two decades later, this is rich, soft, and supple – and simply perfect for drinking RIGHT FREAKIN’ NOW! This might be your last, best chance to score 2007 Napa Cab (yes, it is a blend, but with 84% Cabernet Sauvignon, 12% Cabernet Franc, and 4% Petit Verdot – you could legally call this a Cabernet Sauvignon) that is still drinking like an absolute CHAMP! Black cherries, warm earth, clay, and raspberries. Pencil lead and cardamom, with nutmeg, and a little dusting of cinnamon atop grandma’s mixed berry pie. This is seductive and sensual – with a pulse that grabs you and never lets go. The price for this ICONIC Magnum is straight up silly – but there aren’t a ton to go 'round.Â
