We’re starting with something crazy special – and the perfect item to get this party started! (Any party, at any time, quite frankly.) BILLECART-SALMON! This exceptional 95 POINT cuvée is called Le Sous Bois – a nod to the primary fermentation of Champagne’s Big Three grapes being fermented in oak (sous bois translates to “under wood”), and I can say – and have said many times before – this is my FAVORITE non-vintage Billecart of all-time. 

Billecart-Salmon is a simply ICONIC Champagne producer, family owned and run for over 200 years, across seven generations, with access to 40 Grand Cru and innumerable Premier Cru sites across the top vineyards in Champagne. Their winery, caves, and barrel houses cover entire city blocks in the charming little hamlet of Mareuil-sur-Aÿ – with the sort of precise elegance and meticulous order worthy of a Bond villain’s doomsday lair. It’s the most impressive human-crafted sight I've ever witnessed.

The depth, the roundness, the layer upon layer of spice, fruit, and zippy freshness…it’s pretty damn close to bubbly perfection! One-third each of pinot noir, pinot meunier, and chardonnay – aged in the bottle on the lees for 60 months, and finished with a dosage of 7 grams per liter. Up to 35% of the final blend stems from the house’s treasured solera reserves – adding CRAZY depth and metric tons of complexity. Dried rose petals and peonies, with flavors of sour cherries and salted plums, uplifted by this crunchy, spicy minerality – making for one STELLAR wine that is pretty, round, and gloriously sleek! Va-va-VROOOM! A 60s-era Ferrari roadster comes to mind, and it's an image I simply can’t shake or disassociate with each lusty sip. This is stylish and potent, yet charming and soft-spoken. Fantastic stuff…now go get some!!!
